Easter 14'

It's egg time! We didn't dye eggs last year, but I couldn't help buy the package when I went shopping, so we did it this year! Jeremy doesn't remember doing this when he was little, so I had to teach him all the tricks : )

Jeremy's Birthday

We got home from our honeymoon just in time for Jeremy's birthday and Easter! I'm going to do these two posts first since our honeymoon is going to take a few weeks to get through : )

Art Show

The day before we left for our honeymoon (Friday the 11th) we had our annual art show at the daycare! Last year was my first one and it was a lot harder because I was in the infant room, which means all of the art is really coming from us teachers. This year, being with the two year olds, it was a lot more fun getting them to do most of the crafts and making everything. Our room did the alphabet as our theme and then broke the room up into 4 categories, one for each teacher.

I had so much fun thinking of and doing the crafts with the kids, but it was a lot of work (considering while I was preparing for this I was preparing to leave the next day for our honeymoon and then unexpectedly had a sick husband to take care of) and a very long night, so I am slightly glad it's over with until next year ; )

I have no title...

Do you ever have those moments where you just sit there and ponder on your life, realizing how happy you are? I do. I do a lot lately.

This weekend I had many of them.

We were dog sitting our favorite little boy, so that in and of itself makes me happy. 

 

We also had some gift cards that got us some of our last minute things we still needed for our upcoming trip and got to enjoy some fabulous food that I didn't have to cook. (Who doesn't love that??) 

Then we got to celebrate with one of my favorite little people who had his first birthday this past week. Many of you probably don't know this about me, but I have a boyfriend. His name is Joshua and he is now 1 : ) Don't worry, Jeremy knows about this ; ) 

 

Then we got to go to Jeremy's school and watch some of his kids in their performance of 'The Wizard of Oz.' It was another proud wife moment as kid after kid yelled out "Hi, Mr. Thomas" from every direction and parents came up to us and told both him and I how much their kids love his class. I am so glad he is getting recognized and praised this year. He deserves it. 

We both have busy weeks ahead but I am thankful as hopefully it will make the time pass by! We pull out Saturday morning : ) You may not hear from me again this week but don't worry, I'll have a lot to catch you up on after Easter! Have a great week : )

It's Hump Day!

I don't know about the rest of you guys, but usually by this day I'm more than ready for it to just be Friday already. Sometimes the work week has already gotten to me and more than most nights I just don't want to cook anything! Usually on these days my crock pot becomes my best friend, but the other day (thanks to my bff Pinterest) I came across this delicious little dish.

Now I did a few things differently when I made it, 

so here's "my" recipe...

I browned one pound of burger with an onion and a few cloves of garlic. Once browned I added a packet of taco seasoning with the water that the packet instructs you to use. Once that simmered together and becomes a little thick, I poured about half a jar of our favorite salsa right into the meat. Then I got my spring form pan out and sprayed it with a little cooking spray. Lay down one tortilla, layer with the meat mixture, then some fresh cut tomatoes, then some cheese. Another tortilla, more meat, tomatoes and cheese. Then another tortilla and more cheese. Cook at 350 degrees for 15-20 minutes! We ate it with guacamole, sour cream and salsa on top! 

It was literally the best taco, enchilada or quesadilla we had ever had! : ) 

P.S. I didn't "un-pop" the spring form pan to cut it because I was afraid all the cheesy goodness would spill out so a pie pan may even work just as good/better!
